We search across the world for the highest quality and most delicious honeys. Our honeys come to us from many different regions in North & South America and each help define our unique wines. The honeys take on the delicate characteristics of the blossom the bees pollinate.
While using freshly harvested honeys, we strive to maintain the delicate honey aromas. That's why we ferment in stainless steel tanks with precise temperature and oxidation controls. We combine the honey with special yeasts to ferment the honey creating the alcoholic wine. For each batch of wine, we will use nearly 2 tons of honey.
